What is Kombucha?

Kombucha (Kom-Boo-Chah) is a tasty fizzy non-alcoholic  beverage. It dates back thousands of years to at least the Qin Dynasty as “the tea of immortality and the elixir of life.” Ya know, the Emperor responsible for the Great Wall and the infamous Terra-cotta Army?

This beneficial drink is made by specific measurements of quality Water, Tea, Sugar, and cultures from a previous batch.

Though there are many accounts of this tasty tea being used globally throughout the centuries, it is agreed to have incredible benefits.

Recent research published in the Journal “Comprehensive Reviews in Food Science and Food Safety” show that the unique interaction of yeasts and bacteria in kombucha produce critical organic acids including acetic acid, gluconic acid, glucuronic acid, malic acid, oxalic acid and usnic acid.

Glucuronic acid is quite important. The acid is produced in the liver. Many of those having a weak or damaged liver may not be making enough of it. Scientists have long hailed the chelating properties of glucuronic acid which binds to toxins in the body making them more water soluble and therefore easier to dispel via the colon and urinary tract. Many of us living in the modern industrialized world are immersed in pollutants and toxins which accumulate inside. Getting rid of that unwanted chemical baggage is an important first step to recovering health and vitality.

Kombucha is also high in antioxidants. This may be due to the presence of tea polyphenols (the most powerful anti-oxidants among the plant phenols), and ascorbic acid.

There are claims that Kombucha may also contain vitamins B1, B2, B6 and B12. Scientific studies have indeed proven that Kombucha  Tea Catechins (disease fighting Antioxidants) effectively reduce LDL cholesterol absorption from the intestine… (Dufresne and Farnworth).
